Crock Pot Barbecued Chicken

“I promised some quick and easy hints, and this is one of them.  It is also a cool way to cook in the summertime.  It is not only fast and easy, but it is delicious.  This is good served with baked potatoes, mashed potatoes, or potato salad and beans for a traditional barbecue meal.  Quite frankly, the bought canned Ranch-Style beans are hard to beat as a side dish for barbecue.”

 Spray the inside of the slow cooker with vegetable cooking spray and add frozen chicken tenders.  (Yes, I said frozen.)  Slice some onions on top of the chicken and cover with barbecue sauce of your choice.  Put the lid on, and cook on low for 6 to 8 hours and on high for 4 hours.   As you can see, this is an inexact science, so you decide on the amounts of all the ingredients depending on your own needs.

Slow Cooker Reminder

A good thing to remember when you are planning a meal for a busy day is your slow cooker (Crock Pot).  Try putting some beef stew meat in the slow cooker, sprinkle with a package of dry onion soup mix, add a can of cream of mushroom soup, stir, and cook for 4 hours on high or all day (8 hours) on low.  Serve over rice or noodles, add a salad or green vegetable, and your meal is planned and done.  This is called “Beef Tips Over Rice” in my cookbook.

I know, it will take a little time in the morning before you leave the house, but I promise it will be worth it when you return home and smell the aroma.  It won’t take long to finish up the meal preparation, set the table, and everyone will be waiting for a taste.

Red Beans

“This red bean recipe came from Bill, my dad. It is in my cookbook as Bill’s Beans; however, I have made a slight change in the cooking time. If you already have Betty G’s Country Recipes, please note these changes.”

  • 2 cups dried pinto beans
  • 6 or 7 cups water
  • 1 can diced stewed tomatoes
  • 1 medium chopped onion (dried minced onion works well)
  • 1 1/2 tsp chili powder
  • 1 cup boneless ham, cubed (I usually leave this out)
  • 2 Tbsp oil
  • 1 tsp salt
  • 1 tsp sugar

Mix all ingredients in a slow cooker and cook on high for about 14 hours.

Beef Tips over Rice

“This is a very easy, quick meal that can be prepared in a Crock Pot. Its aroma makes you look forward to a good meal at the end of the day.”

  • 1 package beef stew meat
  • 1 package dry onion soup mix
  • 1 can cream of mushroom soup

Place all ingredients in a slow cooker or crockpot and cook on low for about 8 hours. Serve over cooked rice.
